Sausage Bredie / Soesys Kos

  • 1 kg Lamb or beef sausage cut into pieces
  • 4 tablespoons of oil
  • 3 onions, peeled and finely chopped
  • 6-8 potatoes peeled and quartered
  • Salt and black pepper to taste
  • 3 whole chillies
  • 1 clove of garlic, peeled and finely chopped
Directions
  • Step 1 In a large pot, on medium to high heat, heat the oil and add the onions, brown well.
  • Step 2 Add the chillies, garlic and half a cup of water and cook the onions for 10 minutes.
  • Step 3 Next add the sausage, salt and pepper and potatoes and cook for about 8 minutes stirring occasionally.
  • Step 4 Next, add a cup of water and cook until potatoes are soft.
  • Step 5 Serve with white rice and atchar. Delicious !!!

Sweet Yellow Rice with Raisins and Lemon Zest

A popular accompaniment to so many dishes and my personal favourite served with roasted chicken and vegetables for a Sunday lunch.

Ingredients

  • 350 g basmati rice

  • salt to taste

  • 5 ml (1 t) tumeric

  • 3 cardamom pods

  • 2 cinnamon sticks

  • 125 ml (1/2 C) raisins

  • 30 ml (2 T) sugar

  • 45 ml (3 T) butter

  • 15 ml (1 T) lemon zest

  • Fresh coriander for garnish

Directions

  • Heat 1-litre (4 C) water in a large pot, add the rice, salt, turmeric, cardamom, cinnamon sticks and raisins and cook for 7-8 minutes only. Rinse with cold water and drain.
  • Transfer the rice to a microwave-safe bowl and gently stir in the sugar and butter. Close with a lid and microwave for 10 minutes.
  • Garnish with the lemon zest and fresh coriander.
