Ingredients

- 1 kg Lamb or beef sausage cut into pieces
- 4 tablespoons of oil
- 3 onions, peeled and finely chopped
- 6-8 potatoes peeled and quartered
- Salt and black pepper to taste
- 3 whole chillies
- 1 clove of garlic, peeled and finely chopped
Directions
- Step 1 In a large pot, on medium to high heat, heat the oil and add the onions, brown well.
- Step 2 Add the chillies, garlic and half a cup of water and cook the onions for 10 minutes.
- Step 3 Next add the sausage, salt and pepper and potatoes and cook for about 8 minutes stirring occasionally.
- Step 4 Next, add a cup of water and cook until potatoes are soft.
- Step 5 Serve with white rice and atchar. Delicious !!!

Sweet Yellow Rice with Raisins and Lemon Zest

Ingredients
350 g basmati rice
salt to taste
5 ml (1 t) tumeric
3 cardamom pods
2 cinnamon sticks
125 ml (1/2 C) raisins
30 ml (2 T) sugar
45 ml (3 T) butter
15 ml (1 T) lemon zest
Fresh coriander for garnish
Directions
- Heat 1-litre (4 C) water in a large pot, add the rice, salt, turmeric, cardamom, cinnamon sticks and raisins and cook for 7-8 minutes only. Rinse with cold water and drain.
- Transfer the rice to a microwave-safe bowl and gently stir in the sugar and butter. Close with a lid and microwave for 10 minutes.
- Garnish with the lemon zest and fresh coriander.
