Sweet Yellow Rice with Raisins and Lemon ZestCourse: SidesCuisine: Cape Malay
A popular accompaniment to so many dishes and my personal favourite served with roasted chicken and vegetables for a Sunday lunch.
350 g basmati rice
salt to taste
5 ml (1 t) tumeric
3 cardamom pods
2 cinnamon sticks
125 ml (1/2 C) raisins
30 ml (2 T) sugar
45 ml (3 T) butter
15 ml (1 T) lemon zest
Fresh coriander for garnish
- Heat 1-litre (4 C) water in a large pot, add the rice, salt, turmeric, cardamom, cinnamon sticks and raisins and cook for 7-8 minutes only. Rinse with cold water and drain.
- Transfer the rice to a microwave-safe bowl and gently stir in the sugar and butter. Close with a lid and microwave for 10 minutes.
- Garnish with the lemon zest and fresh coriander.
