Curry Pasta Salad

  • 500 g Noodle pasta cooked as per packet instructions

  • 1 onion, finely chopped

  • 1 red pepper, finely chopped

  • 1 green pepper, finely chopped

  • ¼ cup oil

  • 2 tsp curry powder

  • 1 cup apricot chutney

  • 1 cup tomato sauce

  • ¼ cup vinegar

  • 1 cup thick sweet chilli sauce

  • 3 tbsp sugar

  • 1 carrot, finely grated


  • In a saucepan, heat the oil and sauté the onions, green pepper and red pepper for a few minutes.
  • Add the curry powder and stir well. In a large bowl, mix the pasta, the onion mixture and all the rest of the ingredients.
  • Cover and chill in the fridge until ready to serve.
  • love to serve this pasta salad with barbeque meat or chicken.
