Malva Pudding

  • 1 large egg

  • 1 cup of caster sugar

  • 1 cup of cake flour

  • ½ tsp of baking powder

  • 1 tsp bicarbonate of soda

  • 1 tbsp. of fine apricot jam

  • 1 tbsp. of vinegar

  • 1 cup of milk

  • 2 tbsp. butter

  • Sauce
  • 1 cup of milk

  • 3 tbsp. sugar

  • 3 tbsp of butter

  • 2 tsp vanilla essence


  • Preheat the oven to 180 degrees.
  • In a large bowl, cream the butter, sugar and egg together.
  • Next add the rest of the ingredients and mix until well combined. Pour into a greased ovenproof dish. Bake in a preheated oven on 180°C for 35 minutes.
  • In a saucepan, heat all the sauce ingredients together stirring until nice and hot. Remove from the heat and pour the sauce over the hot pudding.
  • Serve with delicious custard or cream.


  • To make a bigger size pudding, simply double all ingredients.
